Christmas Side- Cream O' Collards Gratin

So happy to present this holiday must for your Christmas Table. This is a dish that makes you all warm and cozy inside. And who doesn't like layers. Starting with the crisp potato crust for that first layer that holds everything together. Than the collard greens that you can costumize with your own classic or grandmas recipe but add our cream sauce to give it a little Christmas extra. Than the cheese is the last and final layer. This has everything you could ask for in a festive side for this holiday season. Try it out and tag us #yourothertastebud 

Below is the RECIPE

Feeds 4-6 people

Potato Layer
2tb butter
1 large potato thinly sliced
Salt and Pepper

Heat pan to medium high. Add butter and layer potatoes around the pan and cook for 3-5 mins . Season with salt and pepper

Collard Greens

1 Tb canola oil
half of 1 onion
2 slices of pork belly chopped or smoked turkey leg
2 cloves of garlic minced
2 cups mustard and collard blend
2 cups kale
4 cups veg stock
4 dashes tapatios hots sauce
3 Tb apple cider vinegar
1cup of water

Add oil.Sweat onion ,pork belly and garlic on medium heat for 5 minutes. 
Add the rest of ingredients. 
Cover and cook on low heat for 1hr 30mins or until greens are tender . 
After done drain the liquid from the pot . 

Cheese Sauce

6oz butter
1/3 cup flour
1clove garlic
2 cups milk
1 cup heavy cream
1Tb thyme minced
1/4 cup cream cheese
2 cups giuda cheese (reserve 1 cup for topping ) 
1/2 Tb salt
1Tsp pepper
1Tsp Nutmeg

Add butter and melt . Add flour and cook for 2-3 minutes on medium low heat . Add garlic and cook for an additional 1 min . Slowly add in milk and cream while whisking . 
Add thyme and cream cheese and cook for 15-20mins , whisk ever few minute to prevent the bottom from burning . 

Slowly add 1 cup of gouda cheese while whisking . 

Preheat oven to 400 degrees . Mix the cheese sauce with the collards . Pour the collard greens mixture over the layered potatoes . Add the remaining 1 cup of cheese on top and bake for 15-20minutes .
